Very Best Banana Bread


My sister-in-law brought a mini loaf of this banana bread to me when I was in the hospital after I had Max. It is the best banana bread I've ever had! It's now become a favorite in our family. This bread has great flavor, is very moist, and tastes even better the day after you make it. Enjoy!

3 or 4 ripe bananas, mashed
1/3 cup melted butter
1 cup sugar
1 egg, beaten
1 tsp vanilla
1 tsp baking soda
pinch of salt
1 1/2 cups flour

No need for a mixer for this recipe. In a medium sized bowl, mix butter into the mashed bananas. Add sugar, egg, and vanilla. Sprinkle baking soda and salt over the mixture and mix in. Add flour last. Pour mixture into a buttered loaf pan.* Bake at 350 degrees for 55-60 minutes.

*After buttering the pan, I sometimes coat it with a sprinkling of sugar - both on the buttered pan as well as on the top of the loaf. Delicious!
